Ruby Chocolate is the 4th chocolate in the world behind Dark, Milk and White chocolate. The variety has been under development since 2004 and has recently been perfected and made available to the consumers.
The pink colour that is seen in the chocolate is because of the shortened fermentation to retain the pink hue, and the berry notes. Took Barry Callebaut 14 years to perfect this technique and now D'Art Chocolate in Vietnam is launching it exclusively with Barry Callebaut. D'Art uses RB1 which is FDA approved to be marketed as Chocolate.
